Could I just switch out my Marshall excelsior regulator for a 2-stage regulator commonly on travel trailers with 2 propane tanks?
I have the rigid copper lines so it would require modification to install an extend a stay. I’ve found regulators that are the same dimensions of the Marshall excelsior. I was thinking I could install the dual inlet regulator, turn the shut off valve 90* so it’s facing up instead of to the right. Then run a short pigtail from the shut off valve to the regulator, and the other pigtail for the external tank- I can install a 90* fitting off the bottom port of the new regulator.
I haven’t worked with propane lines before so I want to run it by someone more knowledgeable. It’s an easy job but if there’s a detail I’m missing I rather be safe than sorry.
Another option:
I had a leaking shut-off valve awhile back so had it replaced. Also replaced the regulator and added an extend-a-stay fitting at the same time. I’ve worked with gas lines before but opted to have it done by professionals.
Assuming the dimensions and pipe fittings are the same, I don't see why this wouldn't work. It wouldn't be different from replacing the stock regulator. With a quick search, I wasn't able to find a manual switchover regulator with the same dimensions.
Adding an Extend-A-Stay usually requires cutting and reflaring the copper supply line or reconfiguring the propane plumbing as Harry did.

This is the way I added external propane when I was camp hosting. I purchased parts from a local propane dealer. The connection to the coach was through the coach fill valve.

Propane in the tank is liquid. I made up the same hose and use it to gravity fill the coach propane tank from upside down BBQ tanks raised on a table. Works good.
On my 23.5 front lounge, there was no room for the X tend a stay fitting.
I had Buddy's welding and RV in Flagstaff make a fitting that could be fit into the system.
It has about a 3 foot hose, an on off valve and a regulator on the end that can screw into a propane tank.
Works great.
