I’ve been using a RVGUARD RV Water Pressure Regulator (see attachment) for two years. We’re in Florida and I hooked up the water and the gauge said 80 psi. YIKES! I turned the adjustment screw and it didn’t do anything. Since I don’t know the regulator mechanism inside, I’m assuming it’s stuck in a wide open position. Maybe the last time I used it in September, some water was left inside then froze over winter? So should I be daring and try taking it apart and unsticking it or just buy a new one?

Since it isn't working, what do you have to lose?
There could be a chunk of something that is hanging up the valve.

Some locations in Florida have water with a lot of minerals in it. If that is the case in your area, and you don't have a water softener installed upstream of the pressure regulator, then it's likely that mineral deposits will foul the regulator. I rebuilt my coach's regulator twice for this reason.
You may want to ask the management in the park(s) you visit whether or not the park water is high in mineral content. If they answer in the positive, perhaps you should consider using a water softener. I did so for two years in west-central Florida, and it greatly reduced the amount of minerals showing up inside the coach.

Or just don't connect directly to city water. Fill your tank, draw from it, refill when necessary. We've talked about this elsewhere, so I won't belabor the point, but it's a strategy that has a lot of advantages.

Having repaired a few Pex plumbing fittings damaged by water pressure surges in RV parks, I agree with Andy's suggestion to not use the city water connection, instead using the onboard water tank and pump.
The water pump does not have high surge pressure issues that are common in RV parks and doesn't damage the plumbing the way high-pressure surges can.
Our city water connection was capped when the rig was new and has stayed that way.
