I'm looking for a recommendation for a vacuum cleaner that charges on 12v, or at least draws a minimal amount when I plug into my dainty 500 W inverter. Handheld or stick...I'm open to suggestions.

For the most part, we've found that we can use a regular broom and a whisk broom to sweep the cushions, carpet and the floor. We shake out the rugs and use a bucket of warm water with a micro cloth to wipe things down. When we're done, it's clean and ready for the next round of living.
If we have to use a vacuum, we have a 1.5 gallon shop vac that runs off the 110V and generator. We store it under the forward dinette seat in our 27' MB. The only time we've actually used the shop vac was to clean the inside of the Toad. Hope this helps.
Having little extra space for a vacuum, we use a Ryobi +One dust buster. It uses the same batteries as the other power tools we carry.

For major vacuuming, while on the road, we will stop at a truck stop or car wash and use the pay vacs,
They usually have good suction and long hoses.

A dustpan and broom for the linoleum, plastic carpet runners for the fuzzy stuff. Throw rugs that can be taken outside and whomped on. And a small hand vac that I picked up at a yard sale for $5 that gets the job done, but I doubt I'd be that finicky when boondocking.
We recently spotted a fancy Class A towing a flatbed trailer with a full size washer and dryer on board. And there's that guy who took a big hotel-style ice machine on a fishing trip.

I use a manual Bissell sweeper which works on both floor and carpet.
First I put in earplugs. Then long elbow length gloves. Then I 'duck' tape one of my cats to the end of a long stick. The yowling and its paws moving about clean just about any surface I can get him on and into.
BTW I do have pictures of the setup but DW would kill me if I share them before we get a patent.

We got the Dyson cordless at Temple Costco with many attachments for our home and found that it works well in our 98 ~ MB with the upholstery attachment, floor attachment and carpet attachment although we just take the carpet and upholstery attachments to save room. We recharge it with our little 50watt inverter.

The Swivel Sweeper's advantages:
- inexpensive
- lightweight
- stores flat
- highly maneuverable
- cordless (it'll clean my midbath about a dozen times on a charge)
- bagless; empties without getting your hands dirty
- relatively quiet (no earplugs needed)
- works on both vinyl and carpet
- gets about 80%-90% of the dust, and and pet hair that a vacuum would
Disadvantages:
- not particularly sturdy
- rechargeable battery packs only last for about two years
- no hose or crevice tool
Despite its drawbacks, for everyday floor maintenance I prefer the Swivel Sweeper to any of the half-dozen or so vacuums I've owned over the years.
Rayn: I use a 120V Dirt Devil (hand held auto type) plugged into my 600W PSW inverter with no issues. It does a good job, and takes very little time to do the whole rig. I expect you would have a similar experience. Mostly I just sweep, and wipe down the floor with a damp rag. The vacuum is used only about once a month.
We used a cord/cordless Dewalt that uses the same batteries as the other power tools. Also use it to inflate our Zodiac like boat. Then we pulled the carpet, installed wood and a removeavle outdoor carpet locked in place with Velcro. I miss the vac but like the found space.
